Not "cooking" per se, but I just spent half an hour slicing jalapenos for pickling. Had to double the pickling liquid, since I had so many peppers.

That cutting job was straight shit. If I were your boss you would be fired ASAP. None of the jalapeños are evenly cut. Someone will eat one on a nacho and think "Oh, so the jalapeños are going to be this size," and then eat another and realize they've had their pants pulled down and been fucked up the ass by big corporate government

We went pretty simple for Christmas dinner this year. Everything can be prepped a day or two in advance and the only thing you really have to fool with is sautéing the mushrooms and brussel sprouts. Plan on taking this approach every year as I don't like spending a lot of time in the kitchen on this day.

Roasted Beef Rib with homemade horsey, au jus, and sautéed shrooms.
Roasted root vegetables (carrots, parsnips, onions, garlic,a few turnips and beets)
Stove Top Sprouts cooked with diced onion and bacon.
Loaded baked potatoes.
Sweet Potato casserole (with brown sugar, pecans)

We did Thanksgiving dinner, cuz the in-laws made it for thanksgiving, and it sucked major bawlsack.


Turkey(dry-brined and slathered with a sage butter mixture.) Stuffed with an Italian sausage and apple dressing.
Also a pan of dressing too.
Mershed pertaters and sage gravy
roasted brussels with diced bacon and finished with a healthy drizzle of balsamic vinegar
cheese pearl onions,<-----so awesome...ties everything together

i'm going to try put a Mexican spin on a steak roll up

Instead of spinach, peppers, and provolone that's used a lot in this dish, I'm going to try thinly-sliced tomatoes, sour cream, Mexican cheese, and either taco sauce or salsa. Mexican seasoning for the flank steak.

I'll smother it with queso, salsa vedre, and shredded lettuce.

And I just ordered the Power AirFryer XL.

Had a dish this year that was 75% mashed potatoes and 25% sweet potatoes combined, fresh nutmeg was added as well.

not bad.
Man I love some sweet potatoes!!! Mostly just baked and plain, sometimes cut into fries tossed with olive oil and baked. Never really liked them before the wife made a sweet potato casserole though.
