All of them. I grew up in Florida, big red snapper fan there. Now in Colorado and really enjoying trout and walleye. Whatevers fresh lol.

Crappie and bream are great as well.

I like my fish fried, and I like catching my own fish.

brook trout, lake perch , and walleyed pike in that order. Mississippi Bullhead and Lake Sturgeon , oh fuck I love them all .

I love me some Walleye. But it's funny, last summer we caught a few Walleye and a few keeper Pike and cooked them in the same way (some garlic/lemon/butter) and I think I liked the Pike more. It was the first time I'd actually ever eaten a Pike and the only real problem with the Pike is they are bony as hell.

Trout, Walleye, Catfish, Crappie especially when caught myself.

2 years ago the wife and I took a vacation to Belize. Paid a local there some money to take us out on his boat and go fishing. We caught mostly a bunch of assorted snappers and his buddy swam down to the ocean bed and pulled up 3 or 4 lobsters. They then took us to a beach they knew about it with a wood burning stove and cooked up the fish and lobster right there for us. Probably the best meal I have ever had.

Was also in Bora Bora a few years ago and let me tell you, the Mahi Mahi and scallops there were the best I've ever had. Right out of the ocean and onto my plate.

I've had wild caught Alaskan salmon and that ranks right up there near the top...A neighbor went up there and caught a bunch...sent back some 120lbs on ice....totally different from farm raised...if you like salmon that's top shelf.

Also...pan seared red snapper in a little butter and white wine concoction is great...had that down in the Virgin islands...from the ocean to the plate in about 2 yrs...outstanding!

@Chewbaccer...is there any other way than fried catfish? You know how to filet those bad boys too I bet...I can catch them. but don't know how to clean, prep.

Pike is delicious and if you Lear to filet them right, there are no bones. They have y bones that are like a rib cage. If you try to filet them like you would..say a trout, they are inedible due to bones. Once you learn how to properly filet them, you'll have boneless white eat that is delicious. Biggest proble wth pike, is they don't put off a ton of eat. You need a pretty big bastard to get some decent filets.

If prepared right, s'not a fish out there ain't good eating.
All things considered, though, s'not a fish out there compares to Walleye for easy preparation.

Catfish are the easiest fish to clean.

Nail their head to a tree, make a cut all the way around it just through the skin, then the skins will come off easy if you pull it with some needle nosed pliers. Then all that's left is filleting, and that's no problem at all.

I'm with ya but I have a hard time deciding between red and snook. Had a sand trout I caught not too long ago and it was right up there. But love me some reds
