I agree with you on the bear. I thought it was greasy and gamey, but I enjoy some gator tail.

The gator I had was chewy. But I was in Florida when I tried it, so that's probably why.

BBQ in the Southeast is the best there is! From the Carolinas through Georgia and Alabama, and a few spots in Tennessee & Kentucky. I hear there's good 'cue in Mississippi, too, but I can't say as I've ever tried any there. I dig vinegar-based & mustard-based, as long as it's done well. I've had some of both styles that were not done well. But don't give me that white BBQ sauce, 'cause that ain't barbeque!

I've never tried bear meat, but I do like gator, rabbit & frog legs. Beaver is good, too, when the right person is fixing it. So is gopher tortoise. Rattlesnake is too greasy.
