Happy Thanksgiving HB10, Today I make potato dumplings, pies, & pumpkin bars. I hope my guests don't have problems going home or I'll have to put them up and prepare food Friday instead of preparing for the game. My wife thinks she is going out shopping early Friday - smh. My daughter the helper is staying home today as her kids got some kind of virus that's going around - keep it away from me!

Here's to wishing all you guys a safe, satisfying, and happily fattening Thanksgiving!!

I'll be out in my brothers yard tomorrow, in the rain//freezing rain/sleet/snow deep frying 3 birds.

Tomorrow night I hope to see Texas lose, Friday a Husker win, and go through my checklist of teams that need to lose for Nebraska to make a bowl if they don't beat Iowa.

They're great. The white meat is just as juicy as the dark meat.

I'm hoping we don't get any 'down pours' of rain.
Sleet and/or flurries won't be a problem. The fryer has a lid.

I'll have my rain gear that I use for fishing to wear if necessary.

Yes, Fried Turkey is awesome....

I actually make my own for chickens.

However, I don't inject the Thanksgiving turkeys. It takes away from the traditional taste IMO.

I brine the turkey overnight in a 5 gallon bucket with a vegetable stock, kosher salt, and herbs solution.

The chacheres is awesome for injecting, if you're brining there's no need to do both it's overkill imo. I put mine this year in my drum smoker but on just straight coal and the cold smoke from my rig was almost too much as I as well prefer the traditional bird flavor.
I was floored this year with the way it turned out with the 24 hr brine and stuffing the cavity with apples, spices and onions, the gravy was top notch
