there are charcoal smokers, wood grills, etc

it's about temp control

If the meat is slow cooking in indirect heat exposed to smoke set up for longer cook time it's smoking.

Directly over the heat source for a faster cook time it's grilling.

I have never used them. Seems like they could cause the meat to be dry.

There only for increasing capacity. They don't help/hurt cooking process, but if you can't fit everything on grill, they help

Can increase the cook time a little if they are packed too tightly to prohibit air/heat flow.

I guess I never filled one enough to really notice, I don't use them often, just another thing to clean

Anyone use a rib rack to stand your ribs upright so you squeeze more in there.
I've had good luck with it.
